Sweet Potato Pumpkin Bites

These look like tiny pumpkins and taste like autumn showing off. The combination of caramelized sweet potato, tangy goat cheese, and crispy sage is the kind of bite that makes guests hover near the platter.

Ingredients

  • 2 large sweet potatoes, scrubbed
  • 2 tablespoons olive oil
  • 4 oz goat cheese, softened
  • 2 tablespoons heavy cream
  • 24 small fresh sage leaves
  • 2 tablespoons honey, plus more for drizzling
  • Flaky sea salt

Instructions

  1. Heat the oven to 425°F and line two baking sheets with parchment.
  2. Slice the sweet potatoes into 1/2-inch rounds. Toss with olive oil and salt, arrange in a single layer, and roast 25 to 30 minutes, flipping once, until caramelized at the edges.
  3. While they roast, whip the goat cheese with the cream and honey until smooth and fluffy.
  4. Fry the sage leaves in a thin layer of hot oil for 20 seconds until crisp; drain on paper towels.
  5. Top each sweet potato round with a dollop of whipped goat cheese, a crispy sage leaf, a drizzle of honey, and a pinch of flaky salt. Serve warm or at room temperature.
